Chocolate Peppermint Mousse

Ingredients

  • 8 ounces 85% cacao dark chocolate - chopped
  • 2 Tbsp. powdered sugar
  • 3 large egg yolks
  • 1/4 cup Zero Calorie Natural Peppermint
  • 2 cups prepared fat - free whipped topping

Instructions

      1. Over a double boiler, melt the chocolate.
      2. Add the sugar, egg yolks, and peppermint flavor and whisk together until thoroughly blended.
      3. Heat until the mixture thickens slightly, about 2 minutes, then remove from the heat and allow to cool to room temperature.
      4. Once cooled gently fold the whipped topping into the chocolate, in batches, until fully incorporated. Cover and refrigerate for at least 2 hours.
      5. Plate and serve as desired. Optionally garnish with additional whipped topping or chocolate shavings.
