Spiced Pumpkin Bread

Ingredients

  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/2 sticks unsalted butter
  • 1/2 cup granulated sugar
  • 1 cup Monin Spiced Pumpkin Purée
  • 2 large eggs

Instructions

      1. Preheat oven to 325 degrees Fahrenheit.
      2. Prepare an 8 x 4-inch load pan by liberally spraying it down with cooking spray.
      3. In a mixing bowl, combine the first 4 ingredients and mix until well combined.
      4. In the bowl of a stand mixer equipped with the paddle attachment, add the butter and sugar and set to low speed.
      5. Increase the speed to medium-high once a sand-like texture is reached and continue to beat until the butter is light a fluffy.
      6. Scrape the sides of the bowl with a rubber spatula and then add in the eggs and puree and mix on low speed until well combined.
      7. Transfer the batter to the prepared loaf pan and bake in the preheated oven for 55-65 minutes, or until a toothpick can be poked in the center of the loaf and comes out clean.
      8. Once baked, remove from oven and allow to cool for 30 minutes before removing from the pan.
      9. Serve immediately or allow the loaf to completely cool before wrapping tightly in plastic wrap and storing at room temperature.
