Spiced Pumpkin Bread
Ingredients
- 2 cups all purpose flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 sticks unsalted butter
- 1/2 cup granulated sugar
- 1 cup Monin Spiced Pumpkin Purée
- 2 large eggs

Instructions
- Preheat oven to 325 degrees Fahrenheit.
- Prepare an 8 x 4-inch load pan by liberally spraying it down with cooking spray.
- In a mixing bowl, combine the first 4 ingredients and mix until well combined.
- In the bowl of a stand mixer equipped with the paddle attachment, add the butter and sugar and set to low speed.
- Increase the speed to medium-high once a sand-like texture is reached and continue to beat until the butter is light a fluffy.
- Scrape the sides of the bowl with a rubber spatula and then add in the eggs and puree and mix on low speed until well combined.
- Transfer the batter to the prepared loaf pan and bake in the preheated oven for 55-65 minutes, or until a toothpick can be poked in the center of the loaf and comes out clean.
- Once baked, remove from oven and allow to cool for 30 minutes before removing from the pan.
- Serve immediately or allow the loaf to completely cool before wrapping tightly in plastic wrap and storing at room temperature.
