Cookie Butter Tiramisu

Ingredients

  • 2 eggs, separated
  • 1/2 cup sugar
  • 8 oz cream cheese
  • 1 cup heavy cream
  • 2 Tbsp. Monin Cookie Butter® Syrup
  • 1 package lady fingers
  • 1 pint cold coffee

Glass Size: 6 slices.

Instructions

      1. In a double boiler on low heat, whisk 2 egg yolks and 1/4 cup of sugar until thick or until temperature reads 180°. Whisk constantly to avoid curdling.
      2. Remove bowl from the heat and whisk in cream cheese and syrup until fully incorporated.
      3. In the bowl of a stand mixer, whip egg whites and sugar together until they reach stiff peaks.
      4. Add 1/3 of the egg white mixture to the cream cheese mix and fold in. Then add the rest and fold until fully incorporated.
      5. Whip the remaining sugar and heavy cream until they reach stiff peaks. Add 1/3 of the whipped cream and fold in. Then add the remaining heavy cream and fold until fully incorporated.
      6. Dip the lady fingers into the coffee until desired consistency and then place on a wire rack to avoid excess liquid.
      7. Layer the lady fingers into the bottom of a pan, then a layer of cream, then add another layer of lady fingers, and then topped with a cream layer.
      8. Transfer to the refrigerator to set for at least 2 hours.
      9. Serve immediately with a dusting of cinnamon or tightly wrap the pan in plastic wrap and store in the refrigerator.
