Cookie Butter Tiramisu
Ingredients
- 2 eggs, separated
- 1/2 cup sugar
- 8 oz cream cheese
- 1 cup heavy cream
- 2 Tbsp. Monin Cookie Butter® Syrup
- 1 package lady fingers
- 1 pint cold coffee

Instructions
- In a double boiler on low heat, whisk 2 egg yolks and 1/4 cup of sugar until thick or until temperature reads 180°. Whisk constantly to avoid curdling.
- Remove bowl from the heat and whisk in cream cheese and syrup until fully incorporated.
- In the bowl of a stand mixer, whip egg whites and sugar together until they reach stiff peaks.
- Add 1/3 of the egg white mixture to the cream cheese mix and fold in. Then add the rest and fold until fully incorporated.
- Whip the remaining sugar and heavy cream until they reach stiff peaks. Add 1/3 of the whipped cream and fold in. Then add the remaining heavy cream and fold until fully incorporated.
- Dip the lady fingers into the coffee until desired consistency and then place on a wire rack to avoid excess liquid.
- Layer the lady fingers into the bottom of a pan, then a layer of cream, then add another layer of lady fingers, and then topped with a cream layer.
- Transfer to the refrigerator to set for at least 2 hours.
- Serve immediately with a dusting of cinnamon or tightly wrap the pan in plastic wrap and store in the refrigerator.
