Toasted Marshmallow Mashed Sweet Potatoes

Ingredients

  • 2 lb. sweet potatoes - peeled and roughly chopped
  • 2 cups chicken or vegetable stock
  • 1 cup heavy cream
  • 1/4 lb. (1 stick) butter - divided
  • 1 tsp. kosher salt
  • 1/2 cup Monin Monin Toasted Marshmallow Syrup

Instructions

      1. In a saucepan, combine the sweet potatoes, stock, cream, 4 tablespoons of butter and salt and bring to a boil over medium-high heat.
      2. Once boiling, reduce the heat to low and simmer the mixture until the potatoes are fully cooked and tender, 15 to 20 minutes.
      3. When the potatoes are fully cooked, remove from the heat and strain out the liquid using a colander.
      4. Place the drained potatoes into a deep mixing bowl, along with the toasted marshmallow syrup and 1/4 cup of the strained cooking liquid.
      5. Using a hand mixer or potato masher, mash the potatoes until well incorporated with the other ingredients.
      6. Add the remaining butter and continue to mix until melted and well incorporated into the potatoes.
      7. Serve immediately, as desired.
