Tiramisu Ice Cream

Ingredients

  • 2 cups heavy whipping cream
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 4 egg yolks
  • 3/4 cup Monin Tiramisu Syrup
  • Crushed ladyfinger cookies - optional
  • Dark chocolate shavings - optional

Instructions

      1. Combine the cream, milk and sugar in a heavy bottomed pot and bring to a simmer.
      2. Whisk the egg yolks in a bowl, then slowly add the hot cream mixture to the eggs while continuing to whisk. Make sure not to curdle the yolks by adding the hot cream to quickly.
      3. Once fully combined return the mixture to the pot and heat over medium-low until the custard coats the back of a spoon (approximately 180° to 190° F.).
      4. Remove from the heat and strain through a fine mesh sieve.
      5. Once strained, add the syrup and refrigerate until the mixture has cooled completely.
      6. After the custard has cooled, pour into an ice cream maker and process according to the manufacturer's directions. If desired, add crushed ladyfinger cookies and chocolate shavings during the freezing process.
      7. Once the mixture has frozen to a soft-serve consistency place into a container, cover tightly and freeze until fully hardened and set.
