Tomato Bisque

Ingredients

  • 4 oz bacon - diced
  • 1 large sweet onion - diced
  • 4 cloves garlic - minced
  • 2 cups chicken stock
  • 1 (35 oz) can peeled tomatoes
  • 1 cup heavy cream
  • 1/2 tsp. dried thyme
  • 1.5 oz shredded parmesan cheese
  • 1 tbsp. salt
  • 1 tsp black pepper
  • 1/3 cup Monin Spiced Brown Sugar

Instructions

      1. In a medium stock pot, brown bacon on medium heat.
      2. .Drain bacon grease and remove bacon from the pot, reserving half of the grease.
      3. Add reserved bacon grease back into the stock pot and set to medium heat.
      4. Add the onion and sweat until lightly browned (about 5 minutes).
      5. Add in garlic and continue to sweat for an additional 30 seconds, then add in the tomatoes, thyme, heavy cream, cooked bacon, and stock.
      6. Bring the bisque up to a boil and continue to simmer for 25 minutes on medium-low heat.
      7. Remove the stock pot from the heat and add remaining ingredients.
      8. Using an immersion blender, puree the bisque until completely smooth.
      9. Return the stock pot back to the heat and continue to simmer for an additional 5 minutes.
      10. Serve immediately or store in a tightly sealed container once cool and store in the refrigerator.
