Basil German Potato Salad

Ingredients

  • 4 lb. Yukon gold potatoes
  • 1/2 cup distilled white vinegar
  • 1/4 cup finely diced white onion
  • 2 Tbsp. chopped fresh parsley
  • 1 Tbsp. whole grain mustard
  • 2 cloves garlic - minced
  • 1 Tbsp. granulated sugar
  • 1 Tbsp. extra virgin olive oil
  • 6 pumps Monin Monin Basil Concentrated Flavor

Instructions

      1. Place the potatoes into a large pot and cover them with water.
      2. Bring the water to boil and cook the potatoes until tender, but not overdone, about 20-30 minutes.
      3. Drain the potatoes, cool slightly, then cut them into 1/4-inch slices and set aside.
      4. In a mixing bowl, combine the vinegar, onion, parsley, mustard, garlic, sugar, oil and basil concentrated flavor and whisk until well incorporated.
      5. Dress the potatoes with the vinegar mixture and cover tightly and refrigerate for at least 20 minutes to allow the flavors to meld.
      6. Keep refrigerated until service.
